Our Story: The Birth of Waxies Caife Licéar and the Legendary baby Guinness shot.


It all began in 1988, behind the worn oak bar of Dublin’s Waxie Dargle pub, where my father, Stephen Daly, wasn’t just pulling pints, he was brewing magic.

In the pub’s basement, Stephen crafted his own coffee liqueur, using Irish whiskey as its base, tinkering until the flavour sang of roasted beans and smooth Irish spirit.

That year, a moment frozen in a photograph captured the spark: Stephen, beaming behind the bar, chatting with a new mother from the nearby Rotunda Maternity Hospital, her hands clutching a gift as she celebrated her recent new-born's arrival.

Inspired by these joyful visits, Stephen started offering complimentary shots of his homemade liqueur to new parents toasting their babies births. To make it special, he topped the dark, whiskey infused coffee liqueur with a creamy layer of Baileys, creating a drink that mirrored a tiny pint of Guinness.
He dubbed it the “Baby Guinness,” a nod to its appearance and the celebrations it marked.

That shot became a legend, spreading from the Waxie Dargle to bars worldwide.

Now, my daughter Nicole, Stephen’s granddaughter and I are bringing that legacy back to life with Waxies Caife Licéar.

We’re reviving the original recipe, the heart of the
'OG Baby G' crafted with the same whiskey-based soul that Stephen poured into every shot glass.
